This is sometimes called a SORN (Statutory Off Road Notification) and can be done easily online (https://www.gov.uk/make-a-sorn).

If you choose to, you can keep the registration from your scrapped vehicle. To transfer this registration number to another vehicle either immediately or in the future, apply to the DVLA and see if you are eligible to do so. The registration number in question will then be retained in the name of the current named holder of the vehicle.
